You may be familiar with Violets from their culinary use, many contemporary Chefs use the flowers and petals to decorate dishes. The vividly-coloured petals of the Violet have been around for centuries, It is said that the ancient Greeks first cultivated Violets to be used for making herbal remedies and to sweeten their wine. Many Violet species contain antioxidants called anthocyanins, meaning they show active antioxidant properties. The Violet has distinctive heart-shaped petals, which is perhaps why they were used historically for love potions. Most Violets are found in the Northern Hemisphere, however some grow in Hawaii, Australasia, and also the Andes.
One of the quirks of Violets is the elusive scent of their flowers; a major component of the scent is a ketone compound called ionone, which temporarily desensitises the nose receptors preventing any further scent being detected from the flower until the nerves recover.
